In Clos de Caille, summer is drawing out, whilst the 2026 vintage is taking shape in the cellar. Since 2023, under the technical supervision of Matthew Cosse, the estate is undertaking in-depth work to further enhance the identity of its terroir and the distinct character of its wines.
Massal selection, plot-by-plot assessment, hand-harvesting, separate vinification: each choice reflects a winemaking philosophy that focuses on the expression of the terroir and the natural balance of the grapes. On the Clos de Caille terroir, where silt, clay, silica and limestone form a unique mosaic, the work aims to reveal freshness, tension, depth and balance.
This requirement is reflected today in the three colours : Anomis, rated 92 out of 100 by Robert Parker, embodies a unique vision of rosé; ; ‘Lucis‘, Tête de Cuvée Blanc, continues this meticulous work; and the 2024 vintage marks the first ‘Clos de Caille Rouges’ wines created by Matthieu Cosse, produced from restructured and carefully selected plots.
Whilst the last bottles of the summer continue to grace the tables in September, the 2026 vintage is being brought into the cellar. A new phase is beginning, building on the work carried out in the vineyard and the constant quest for perfection that guides the master winemakers at Clos de Caille.

Located in Entrecasteaux, in the heart of the Côtes de Provence appellation, Clos de Caille is a certified organic estate whose limited production is focused on excellence. Founded in the 12th century by Cistercian monks from Thoronet Abbey, it is part of a centuries-old wine-growing history, shaped by highly complex clay-limestone soils and a Mediterranean microclimate at an altitude of 200 metres, ideal for producing outstanding wines.
In 1992, Jean-Pierre and Simona Mariotti breathed new life into this unique place, then a vineyard of only 2 hectares, convinced of the potential of this singular terroir. The family undertook a major restructuring. In 2019, they commissioned architect Rudy Ricciotti to create a « Masterpiece », combining architectural beauty and technical excellence, inaugurated with the first vintage in 2021.
Now run by the Mariotti children, the estate continues to grow and now covers nearly 160 hectares, including 40 hectares of certified organic vines. Clos de Caille thus continues to write its history, driven by a demanding quest: to reveal, with humility and ambition, the greatness of its terroir.
The Clos de Caille Estate spans around a hundred hectares between the towns of Entrecasteaux and Saint-Antonin-du-Var, 35 km north-west of the Gulf of Saint-Tropez. Nestled at an altitude of 200 metres, our Wine estate in Provence spans 160 hectares in a single block straddling Provence Verte, Dracénie and the heart of the Var.
We produce red, white and rosé wines, all blended under the technical direction of Matthieu Cosse. Our white wines showcase the Rolle grape variety. Our red and rosé wines are blends of grape varieties such as Syrah, Grenache and Cinsault. All our wines are AOP Côtes de Provence and have been certified organic since the 2024 vintage.
Our Clos de Caille range is available in three colours, including three Têtes de Cuvée: Clos de Caille «Patrius» in red, Clos de Caille «Lucis» in white and Clos de Caille «Clarisse» in rosé. Our wine, The One, ideal for festive and convivial occasions, is available in white and rosé in two new formats: 50cl and 1L.
At Domaine Clos de Caille, respect for the environment is a top priority. Certified organic since the 2024 vintage, we have adopted a traditional, artisanal approach.
Our artisan winegrowers favour the use of organic fertilisers, combined with compost made from vine shoots, plant matter and manure. Monitoring, prevention and analysis of disease cycles lead to informed responses, whatever the season, in order to preserve the health of our soils and the quality of our wine.

The rosés from Clos de Caille, with their pale, luminous colour, seduce with their finesse and aromas of stone fruit, zest and white flowers. Vinified in temperature-controlled stainless steel vats, they combine Grenache, Cinsault and sometimes Syrah, perfect for both fine dining and sunny Mediterranean cuisine.
The reds, which are more structured, blend Syrah and Cabernet Sauvignon. Partially aged in oak barrels, they reveal notes of black fruit, spices and garrigue — ideal with roast lamb or mature Comté cheese.
The rare and precise Côtes de Provence whites express all the purity of the Rolle grape. Their careful vinification combines freshness, texture and balance, to be enjoyed with shellfish, roasted fish or poultry with citrus fruits.
