Its name, meaning «paternal», embodies the values of transmission, heritage and high standards that form the basis of Clos de Caille's identity. Reflecting the family's passion, this wine has a clear ambition: to produce a red wine of excellence, crafted with humility using traditional, artisanal viticulture methods. All our plots are cultivated according to the principles of mass selection, an ancestral know-how that our master winemakers are committed to preserving with rigour. This traditional method guarantees the genetic diversity of the grape varieties and reveals the unique character of our terroir. The soil is clay-limestone and silt-limestone, with a significant clay content that contributes to the complexity of our wines. Côtes de Provence red wines. At Wine estate Clos de Caille, certified organic, every action is guided by respect for the environment. For our red wines, Rosés and Whites, we favour natural practices: organic fertilisers and compost made from vine shoots, plants and manure. In addition, our meticulous work on the soil promotes microbial life and nourishes the earth in depth. Season after season, we adjust our practices to preserve the vigour of the vines and reveal the truest expression of our Côtes de Provence wines.
Vintage 2021
Harvested on 23 September for the Syrahs and 13 September for the Cabernet Sauvignons. Fermented in large vats for the Syrah and in 500-litre barrels for the Cabernet Sauvignon for three weeks. Aged for 12 months in 225-litre barrels for the Cabernet Sauvignon and 500-litre barrels for the Syrah, and 50% in vats.

Harvested by hand. Fermentation takes place in tuns for the Syrah and in 500-litre oak barrels for the Cabernet Sauvignon, over a period of around three weeks.
The wine is then matured for 12 months in 225-litre barrels for the Cabernet Sauvignon and 500-litre barrels for the Syrah, with half of the maturing in vats to preserve balance and freshness.
This dense, expressive red is an ideal accompaniment to rich, structured dishes: mature rib of beef, stew, beef bourguignon or game stew (wild boar, venison). Its smoky, balsamic notes also enhance roast rack of lamb, shoulder confit or duck breast.
It goes elegantly with mature cheeses such as old Comté, Cantal entre-deux or Tomme de Brebis, revealing all its aromatic depth.

The Clos de Caille Estate spans around a hundred hectares between the towns of Entrecasteaux and Saint-Antonin-du-Var, 35 km north-west of the Gulf of Saint-Tropez. Nestled at an altitude of 200 metres, our Wine estate in Provence spans 160 hectares in a single block straddling Provence Verte, Dracénie and the heart of the Var.
We produce red, white and rosé wines, all blended under the technical direction of Matthieu Cosse. Our white wines showcase the Rolle grape variety. Our red and rosé wines are blends of grape varieties such as Syrah, Grenache and Cinsault. All our wines are AOP Côtes de Provence and have been certified organic since the 2024 vintage.
Our Clos de Caille range is available in three colours, including three Têtes de Cuvée: Clos de Caille «Patrius» in red, Clos de Caille «Lucis» in white and Clos de Caille «Clarisse» in rosé. Our wine, The One, ideal for festive and convivial occasions, is available in white and rosé in two new formats: 50cl and 1L.
At Domaine Clos de Caille, respect for the environment is a top priority. Certified organic since the 2024 vintage, we have adopted a traditional, artisanal approach.
Our artisan winegrowers favour the use of organic fertilisers, combined with compost made from vine shoots, plant matter and manure. Monitoring, prevention and analysis of disease cycles lead to informed responses, whatever the season, in order to preserve the health of our soils and the quality of our wine.
