40 HECTARES, A MOSAIC OF TERROIRS
At Clos de Caille, each vintage begins in the vineyard. On our 40 hectares of vineyards certified as organic, we adopt a meticulous, plot-by-plot approach, taking into account the nature of the soil, the aspect, the vigour of the vines and the development of each grape variety.
Each plot is vinified and matured separately, whilst respecting what it naturally expresses. We monitor each batch according to its profile, composition and balance, before blending them with precision during the blending stage. This approach enables us to create balanced and distinctive blends, reflecting the character of the terroir as faithfully as possible.
Wine-making of the highest calibre
In Provence, the light and the climate lend the vineyard a special energy, but it is the precision of the day-to-day work that shapes the wine’s identity.
We seek to preserve the vineyard’s natural balance, to limit yields where necessary, and to nurture each plot without imposing constraints on it. This commitment continues right through to the harvest, which is organised according to the ripeness observed in the vineyard.

The Estate
The grape harvest is therefore not a starting point, but the culmination of several months of decisions taken in the vineyard.
Once harvested, the grapes are taken to our semi-gravity wine cellar, where the meticulous work carried out in the vineyard continues. Each plot is vinified separately, in its own vat, in order to preserve its characteristics and closely monitor its development. It is this continuity, from the vineyard to the winery, that lies at the heart of our expertise: to accurately convey the unique character of our terroirs, whilst preserving their identity.
As September begins, with the grape harvest drawing to a close, A new chapter is beginning at the winery. After several months’ work in the vineyard, the winemaking process begins under the supervision of our oenologist, Matthew Cosse. Little by little, the vintage takes shape, revealing the character of the soils, the balance of the growing season and the personality of each plot.

The making of a great wine
On the 40 hectares of vineyards, no two plots are quite alike. Soils, aspect, grape varieties, ripeness: each has its own character, its own profile, its own expression. Much like a haute couture atelier, we observe them, work with them and vinify them separately, with the aim of revealing their individuality rather than standardising them.
The map of the vineyard then becomes almost a boss : a composition of lines, textures and shades that the piecemeal approach allows us to interpret with precision.
Assembly then comes as the final step: to combine these elements skilfully to create expressive and refined wines, true to their roots. An approach in which the terroir is not merely a place, but a living entity to be interpreted.

New demi-muids for our 2026 Blancs team
The cellar has taken delivery of some new demi-muids, intended to hold our 2026 Blanc and to support the production of Clos de Caille ‘Lucis’, our Tête de Cuvée Blanc.
As demi-muids have a larger capacity than a standard barrel, they allow for a more measured ageing process, with a lower wood-to-wine ratio. The aim is not to impose the character of the wood on the wine, but to support it by encouraging its development whilst preserving the purity of the fruit and its aromatic finesse.
This approach to ageing is fully in line with our quest for balance. Wood acts as a tool in the winemaking process: it can help refine the wine, add depth and complement its texture, whilst allowing the identity of the vintage and the terroir to shine through.
They therefore join our winery with a very specific mission: shaping the way our whites are expressed, by seeking a balance between tension, volume and elegance, the hallmark of our vintages.
