Clos de Caille made its debut on the Provencal wine scene, and quickly won over customers with the finesse and elegance of its wines. True to this demanding philosophy, and the fruit of several years' work, the Domaine has now signed its first red vintages, marking a major step in its history.

Born from a precise blend and meticulous work carried out by its master winemakers, Clos de Caille Rouge embodies the family's ambition: to create wines of the highest precision, revealing the depth of an exceptional terroir and naturally establishing themselves among the great reds of Provence.

Each vintage, including 2024, which is entirely vinified by Matthieu Cosse, follows the same quest for balance, precision and pure expression of terroir.

EARTH

High-quality old limestone, alternating with silica, silt and clay, provides an ideal terroir for the expression of the wine, while preserving its balance and aromatic freshness.

Vinification & Ageing

Vintage 2021

Hand-picked on 23 September 2021 for the Syrah and 13 September 2021 for the Cabernet Sauvignon.
Syrah: half vinified in concrete eggs and half in casks
Cabernet Sauvignon: vinification entirely in 500-litre barrels.
Aged (approximately 40% of the blend) in French oak containers (light toasting)
Syrah: 500L demi-muids for 12 months
Cabernet Sauvignon: 225L barrels for 15 months.
Bottled in April 2023.
Over the following 18 months, the wine was left to rest in the bottle (corked) in order to enhance its roundness while preserving its brightness.

Vintage 2024

Harvested by hand. Parcel-by-parcel vinification in small wooden vats, concrete eggs and tuns, with gentle, controlled extraction by lightly watering the cap. Vatting lasts around 18 days.
The wine is then matured for 12 months in one and two-wine barrels, followed by a few months in vats, to refine its balance, texture and finesse.

Mature red meats, grilled or roasted beef, game, as well as stewed dishes in sauce (daube, boeuf bourguignon), whose richness and depth will be sublimated by the structure and elegance of the wine.
