Why aren’t all colours harvested in the same way?

ONE HARVEST, THREE INTERPRETATIONS OF THE TERROIR

When it comes to the grape harvest, it’s not just down to a single date.
Depending on whether the grapes are intended for a white, a rosé or a red wine, the requirements differ. Freshness, aromatic ripeness, skin texture, tannic structure: each colour demands its own balance.

For white fabrics: maintain the tension, bring out the texture

To produce a great white wine, we need to strike a balance between aromatic maturity and freshness. Harvesting too early can result in a harsh, un expressive wine; harvesting too late can bring greater richness, but at the expense of tension and precision.

In the Clos de Caille range, our white wines are primarily made from Rolle — also known as Vermentino, an iconic grape variety of the Mediterranean basin. It is notable for its ability to combine freshness, aromatic finesse and texture, with flavour profiles that can develop notes of citrus and white flowers.

Choosing the right date for the harvest is crucial: the aim is to harvest when the fruit has reached the perfect level of ripeness, whilst retaining enough vibrancy to give the wine its balance and length.

This approach is fully reflected in Clos de Caille ‘Lucis’, our Tête de Cuvée en Blanc, designed for fine dining and exceptional food pairings: a wine in which ripeness lends body, whilst freshness and tension give structure to the tasting experience.

For rosés: combining freshness and texture

Rosé requires a particularly precise assessment of ripeness. The aim is not only to preserve the freshness and purity of the fruit, but also to harvest grapes that are ripe enough to provide body and real structure on the palate.

The management of the skins is also crucial: they contain a significant proportion of the aromatic and phenolic compounds. Their ripeness contributes to the wine’s refined texture and structure, whilst its freshness and tension preserve its balance and allow it to complement a meal naturally.

For reds: developing the structure, preserving the fruitiness

For Les Rouges, assessing ripeness goes beyond sugar levels alone. The ripeness of the skins, seeds and tannins is crucial: it directly determines the texture, depth and balance of the forthcoming vintage.

Harvesting too early can result in firmer, even vegetal, tannins; waiting too long can bring greater richness, but at the risk of losing precision. The challenge lies in finding the moment when the fruit, the texture and the phenolic ripeness all come together.

The quality of the skins is important, as they contain a large proportion of the colour, tannins and aromatic compounds. The seeds also provide valuable indications of the level of ripeness. The aim is to achieve a tannic structure that is present yet delicate, capable of giving the wine structure without ever overpowering the fruit.

This approach finds its most accomplished expression in Clos de Caille Rouge 2024, the first vintage of the red wine to be entirely vinified by Matthieu Cosse. Made from Syrah and Cabernet Sauvignon, it combines structure with a precise framework, marking a new stage in the expression of the estate’s red wines.

One harvest, three styles

In Clos de Caille, it all begins with the same landscape. Then come the nuances.

As the grapes reach maturity, each plot reveals a different rhythm, a particular intention. The white wine calls for tension and light. The rosé seeks a balance between freshness and body. The red wine requires time, depth, and the right level of ripeness in the skins and tannins.

One and the same land, three different perspectives. Three colours that are neither harvested at the same time, nor viewed in the same way.

It is in this almost instinctive attention to detail that the estate’s style is defined: giving each wine the time and space to express its own interpretation of Clos de Caille.

Harvest is underway

The first plots were harvested as early as 14 August. On the agenda: premium Syrah grapes for our rosés, as well as Rolle for our Grande Cuvée.

At the start of this week, the teams continued working with the Grenache, Syrah and Rolle grapes across the estate’s 40 hectares of organically certified vineyards.

An early, short and intense grape harvest, with a schedule that is constantly being tightened up and adjusted each day to match the ripening process and the weather as closely as possible.
