Wine is a living organism, constantly evolving. Served too cold, it closes up, its aromas freeze and its texture contracts. Served too warm, it loses its balance, the alcohol takes over and its finesse fades. Whites : between 10°C and 12°C to preserve the aromatic brightness, freshness and tension.
Rosé wines : between 8°C and 10°C to enhance their roundness, freshness and delicate fruity aromas.
Reds : between 14°C and 18°C to allow the tannins, structure and aromatic complexity to fully express themselves.

Tasting notes: An exceptional wine with crystal-clear brilliance and a golden colour with luminous highlights. The nose is both refined and complex, opening with citrus notes enhanced by an elegant floral nuance. On the palate, the aromatic expression is expressed through a precise and controlled freshness. Complete and refined, it displays perfect harmony through to a long, pure and persistent finish.
Agreements & moments : Ideal as an aperitif, it is a must alongside fish and shellfish. It will also bring out the delicacy of white meats, whether grilled or in sauce.
Sommelier advice Serve at around 9°C in a tulip-shaped white wine glass to concentrate its aromas and allow its freshness to highlight every nuance.

The nose opens with a burst of fresh citrus, followed by hints of ripe fruit and a touch of spice. On the palate, the wine seduces with its volume and intensity, offering a richness that is perfectly balanced by freshness. The finish lingers with delicate bitter notes, promising great personality.
Agreements & moments : The ideal companion for convivial moments, it enhances fish carpaccios and sashimi as well as Mediterranean dishes with fresh herbs.
Sommelier advice Serve between 9°C and 10°C in a large wine glass to reveal the fullness of its aromas and allow its texture to envelop the palate.

Tasting notes : A refined and complex nose, combining sweet spices, ripe black fruits and a hint of wood, the signature of long and controlled ageing.
Full-bodied and harmonious on the palate. The finish is persistent and elegant, opening up with spicy notes and a hint of liquorice.
Food and drink pairings : Ideal with beef fillet with morel mushrooms, roast lamb with Provençal herbs, or a creamy risotto with porcini mushrooms. Also sublime with a platter of mature hard cheeses such as Comté or Beaufort.
Sommelier advice Serve between 16°C and 18°C, after aerating for about thirty minutes, to reveal its aromatic depth and texture.

The Clos de Caille harvest: when nature reveals its treasures
Autumn is approaching, and with it comes the excitement of the grape harvest at Clos de Caille. We are preparing to harvest the first plots, respecting the rhythm of nature.
This is always a special moment at the estate: the vines bear fruit after a year of care and attention. Our entire team, led by Gérald Abbou and Matthieu Cosse's Technical Department, is fully mobilised to ensure that this vintage reflects all the expertise and care that goes into Clos de Caille.
