EARTH

All our plots are cultivated according to the principles of mass selection, an ancestral know-how carefully preserved by our master winegrowers. This traditional method preserves the genetic diversity of the grape varieties, while revealing the unique identity of our terroir. The soil is based on high-quality old limestone, alternating with silica, silt and clay, offering a geological richness that allows the expression of this Côtes de Provence wine, while preserving its balance and aromatic freshness.

Assembly

Vinification & Ageing

Fermentation takes place in temperature-controlled stainless steel vats in order to preserve all the aromatic purity of this white wine. At the end of this stage, the wine is racked, followed by several months of ageing on fine lees. Bottling takes place in early spring, ensuring a perfectly balanced wine.

 

Environmental initiatives
Respect for the environment is at the heart of our concerns at the Clos de Caille wine estate: a daily task that requires patience and precision in order to faithfully convey what the land has to tell us. Certified organic, our approach cultivates excellence by combining tradition and innovation. To produce our white wines, we use organic fertilisers and compost made from vine shoots, plants and manure. We also carry out thorough soil work to nourish the earth and stimulate microbial life. Through careful observation and rigorous preventive practices, we adjust our methods each season to guarantee the excellence of our Côtes de Provence wines.

This fine, luminous white wine will enhance delicate fish (sea bream, sea bass, sole meunière), the seafood (scallops, ceviche, oysters), as well as refined vegetable dishes such as lemon risotto or white asparagus.

It will also elegantly accompany a roast poultry with herbs, of sushi, or even a fresh goat's cheese, highlighting its freshness and aromatic precision.
