The Wine estate Clos de Caille, certified organic, has always placed respect for the environment at the heart of its values: a daily commitment that translates into organic practices dedicated to protecting the vines and preserving the soil.
Offering a unique interpretation of our terroir, our Rosé wines The One are made from organic fertilisers and composts derived from vine shoots, plants and manure. Season after season, our artisan winegrowers carry out meticulous monitoring, prevention and analysis of disease cycles in order to provide reasoned responses for each wine PDO Provence coast product. Respectful of the nature that surrounds us, our distinguished wines are faithful to the soul of our terroir and express the passion of our labour.
Night-time harvesting to preserve freshness, plot-by-plot vinification, direct pressing, settling and then fermentation at 16°C.
This rosé wine Pairs perfectly with a slice of bread spread with black olive tapenade and sun-dried tomatoes as an aperitif. Enjoy it with a grilled pork chop accompanied by roasted baby potatoes, and finish off with a delicious caramelised yellow peach tart for dessert.

Located between Entrecasteaux and Saint-Antonin-du-Var, the Clos de Caille cultivates excellence through limited production and certified organic farming. Founded in the 12th century by Cistercian monks from Thoronet Abbey, this historic site has been dedicated to working the land and producing exceptional wines since its inception.
Reborn since 2021 under the impetus of the family Mariotti, the estate reveals the generosity of its remarkable terroir every day. Acquired in 1992 by Jean-Pierre and Simona Mariotti, this 7-hectare haven of peace now covers 160 hectares, including 40 dedicated to organic viticulture.
Located on a unique geological terrace between the crystalline Maures region and the Jurassic limestone hills of Provence, Clos de Caille benefits from silica-enriched loamy-calcareous soils and a mosaic of microclimates that promote the expression of great wines. Among its iconic vintages is the rosé. The One embodies this quest for perfection: a luminous expression of the Mediterranean art of living, available in 50 cl and 1 litre formats, ideal for convivial moments and special occasions alike.
The Clos de Caille Estate spans around a hundred hectares between the towns of Entrecasteaux and Saint-Antonin-du-Var, 35 km north-west of the Gulf of Saint-Tropez. Nestled at an altitude of 200 metres, our Wine estate in Provence spans 160 hectares in a single block straddling Provence Verte, Dracénie and the heart of the Var.
We produce red, white and rosé wines, all blended under the technical direction of Matthieu Cosse. Our white wines showcase the Rolle grape variety. Our red and rosé wines are blends of grape varieties such as Syrah, Grenache and Cinsault. All our wines are AOP Côtes de Provence and have been certified organic since the 2024 vintage.
Our Clos de Caille range is available in three colours, including three Têtes de Cuvée: Clos de Caille «Patrius» in red, Clos de Caille «Lucis» in white and Clos de Caille «Clarisse» in rosé. Our wine, The One, ideal for festive and convivial occasions, is available in white and rosé in two new formats: 50cl and 1L.
