The art of savouring a Clos de Caille like a sommelier

THE ART OF TASTING A CLOS DE CAILLE LIKE A MASTER SOMMELIER

Just as a piece of fine jewellery reveals itself in the light, a great wine unveils its most precious secrets to those who know how to observe, listen to and understand it.

THE EYE – THE FIRST IMPRESSION

To identify a beautiful colour, place your glass slightly tilted on a light background so that you can appreciate its hue and clarity. A pale rosé with silvery hues suggests freshness and delicacy, a crystalline white golden sparkles herald liveliness and structure, while a ruby red or purple profound evokes concentration and maturity.
Also note the brilliance, a sign of quality in the blending and vinification, as well as the density, which can reveal the body of the wine.

A pale rosé with pearly highlights, revealing a refined and chiselled nose where notes of white fruit and citrus intertwine. On the palate, the attack is velvety: roundness and harmony combine in a perfectly balanced texture. The expressive finish marries the maturity of the fruit with aromatic freshness. Ideal with langoustine carpaccio or pasta alla norma.

THE NOSE – THE SOUL OF WINE

To smell wine like a sommelier, hold the glass by the stem and appreciate it from a distance to capture the most volatile aromas. Without swirling it, bring the glass closer for a first sniff, then gently swirl it to aerate the wine and release more intense aromas. Inhale in small sips and identify the main aromatic families – fruity, floral, spicy or mineral – before specifying the nuances. Like a perfume, wine evolves in the glass and gradually reveals its full complexity.

A clear and brilliant white wine, adorned with a golden colour and luminous highlights. The nose reveals a bouquet of citrus fruits, enhanced by a floral touch. On the palate, the crystalline freshness gracefully prolongs the aromatic expression, revealing a perfect balance between intensity and elegance. The long and pure finish is the hallmark of a complete and refined wine, offering great harmony.
Ideal as an aperitif, it pairs well with roasted turbot with basil butter or Bresse chicken with morel sauce.

THE MOUTH – THE TASTE SIGNATURE

On the palate, first evaluate the attack — the first sensation that reveals the wine's liveliness or roundness. Let it unfold to perceive its texture, its balance between acidity, sweetness, bitterness and tannins. Then analyse aromatic complexity : fruit, flowers, spices, woody notes... Finally, measure the length, i.e. the persistence of flavours after the sip: the longer it lasts, the more the wine expresses its finesse and quality.

Deep, intense colour, revealing a complex nose blending rare spices and fleshy black fruits. The refined ageing process brings nuances of precious wood. On the palate, the wine is full-bodied with a beautiful round and harmonious texture, lovely ripe tannins and a long finish with hints of spice.
