FROM 7 HECTARES TO A BENCHMARK IN PROVENCE

At Clos de Caille, every winegrowing action is part of a continuous process. millennial heritage, passed down with humility and reinterpreted with rigour by our master winemakers.

Nestled in the heart of Provence Verte, this former property of the Cistercian monks of Thoronet Abbey has been the refuge of the Mariotti family since 1992. For a long time, the grapes were sold, until a soil analysis revealed theThe exceptional potential of this clay-limestone terroir. After thirty years of restructuring, The vineyard now covers 40 hectares within a preserved setting of 160 hectares in a single block.t.

Since 2021, a high-tech semi-underground winery designed by Rudy Ricciotti has enabled this potential to be fully realised through plot-by-plot vinification. This rigour is enhanced by organic viticulture and meticulous work in the cellar, where every detail is designed to express the uniqueness of our terroir. As the estate is located in a Natura 2000 area, the team is committed to preserving and promoting the biodiversity of its environment.

TWO ICONS, ONE SIGNATURE OF EXCELLENCE

Clos de Caille ‘Patrius’ 2021 – Red Tête de Cuvée

The grapes were harvested by hand on 23 September 2021 for the Syrah and on 13 September 2021 for the Cabernet Sauvignon. Half of the Syrah was vinified in concrete eggs and half in casks, while the Cabernet Sauvignon was vinified entirely in 500-litre barrels. The ageing process, representing approximately 40% of the blend, took place in lightly toasted French oak containers: twelve months in 500-litre demi-muids for the Syrah and fifteen months in 225-litre barrels for the Cabernet Sauvignon. Bottling took place in April 2023, after which the wine was left to rest for eighteen months in the bottle in order to enhance its roundness while preserving its brightness.

The result is a wine with a deep colour and a complex nose of black fruits and spices. The palate is full-bodied and harmonious, revealing ripe tannins and a long, elegant finish, enhanced by subtle woody notes.

Clos de Caille ‘Clarisse’ 2024 – Rosé Tête de Cuvée

Hand-picked, pressed in whole bunches and then fermented in temperature-controlled stainless steel vats, this wine was aged on fine lees after racking until bottling.

The Clos de Caille in Saint-Tropez

Last Saturday, Clos de Caille had the pleasure of accompanying the private event of the San Lorenzo yachting agency, organised at La Bouillabaisse in Saint-Tropez, under the operational management of Mondello Hospitality.
This evening brought together nearly 300 guests, clients and major players in the yachting industry, around our white, rosé and red vintages, served to share the Provençal art of living.
