Bruschetta Caprese by Chef Max Mariola

Ingredients
Bread (country-style or ciabatta)
Ripe tomatoes
Fior di latte (or mozzarella)
Fresh basil
Garlic
Extra virgin olive oil
Salt
Red onion (optional)

Preparation
Toast the bread slices in a hot pan or toaster until golden brown and crispy.
Rub them lightly with a clove of garlic cut in half to flavour them.
Dice the tomatoes into small cubes and, if desired, finely chop a little red onion.
Season with a pinch of salt, a generous drizzle of extra virgin olive oil and a few chopped fresh basil leaves. Mix well.
Cut the mozzarella into small pieces or thin slices.
Assemble: on each slice of toast, place a generous spoonful of seasoned tomatoes, add pieces of mozzarella, then finish with basil leaves.
Drizzle with olive oil and enjoy immediately!

Take the time to prepare your tomatoes. Cut them at least an hour in advance, then marinate them with fresh basil, salt and a drizzle of olive oil. Ideally, leave them to rest overnight: 12 hours in the refrigerator, then 3 hours at room temperature before preparing them.

TASTING NOTES
The refined and complex nose reveals subtle citrus aromas, enhanced by a delicate floral touch. On the palate, the aromatic expression lingers with a lovely freshness. Full-bodied and refined, it offers perfect harmony through to a long and pure finish.
This wine pairs delicately with a pan-fried sea bass fillet or roast veal with morel mushroom sauce. It also goes well with creamy Brie de Meaux or fresh goat's cheese with tangy notes.

High-quality old limestone, alternating with silica, silt and clay, providing an ideal terroir for the wine to express itself while preserving its balance and aromatic freshness.
