Clarisse, daughter of Jean-Pierre and Simona Mariotti, embodies a woman modern, assertive and ambitious, guided by her freedom of thought and its sunny personality. In his honour, the Clos de Caille has created a exceptional cuvée, a veritable manifesto of family values and beauties of Provence. Coming from a unique terroir, the Tête de Cuvée rosé «Clarisse» reveals aromas powerful, elegant and a rare delicacy.

Since the arrival of Matthew Cosse, the grenache has become the backbone of the vintage, accompanied by Cinsault for a more vertical, tense and mouth-watering expression, supported by a delicately saline.
Its assertive notes bear witness to the expertise and of the passion of master winemakers of the Estate. In search of the’perfect balance, the Mariotti family sign here Côtes de Provence Eminent, combining finesse and refinement, offering a new perspective on rosé: that of a wine capable of travel through time.

The Clos de Caille vineyard is cultivated using mass selection with plants produced by Lilian Bérillon, a pioneering nurseryman, in order to perpetuate the production of great wines with a distinct identity, which reveal the uniqueness of our terroir vintage after vintage.
The Mariotti family and their master winemakers have made respect for the environment a top priority, which is reflected in the vineyard's management through sustainable organic practices to protect the vines and preserve the soil.
Presence of silt, clay and silica on ancient limestone, shaped by the formation of the Alps. These silt-limestone soils with high potential offer a perfect balance between the freshness provided by the significant silica component and the filtering capabilities of limestone.
Located at an altitude of 200 metres on the Triassic terrace, this unique terroir gives our Rosé wines concentration, freshness and elegant roundness. The diversity of the soils, ranging from cool valleys with varying clay content to sunny terraces rich in dolomitic magnesium limestone, reinforces this harmonious balance.
Each stage of the harvest and vinification process was carried out with the utmost care, revealing the full richness of the terroir. The grapes were harvested by hand, pressed whole, lightly settled, then fermented in temperature-controlled vats. After alcoholic fermentation, this Rosé wine is carefully racked and aged on fine lees to achieve greater complexity and length on the palate before bottling.
The result is an exceptional AOP Côte de Provence Rosé that reveals itself through its finesse, delicacy and elegance.
The Tête de Cuvée Clos de Caille ‘Clarisse’ Rosé pairs perfectly with refined dishes such as scallops delicately enhanced with black truffle and caviar, grilled sea bass, red tuna tartare on a bed of lemongrass and ginger, or lamb confit with Provence herbs.

The Clos de Caille Estate spans around a hundred hectares between the towns of Entrecasteaux and Saint-Antonin-du-Var, 35 km north-west of the Gulf of Saint-Tropez. Nestled at an altitude of 200 metres, our Wine estate in Provence spans 160 hectares in a single block straddling Provence Verte, Dracénie and the heart of the Var.
We produce red, white and rosé wines, all blended under the technical direction of Matthieu Cosse. Our white wines showcase the Rolle grape variety. Our red and rosé wines are blends of grape varieties such as Syrah, Grenache and Cinsault. All our wines are AOP Côtes de Provence and have been certified organic since the 2024 vintage.
Our Clos de Caille range is available in three colours, including three Têtes de Cuvée: Clos de Caille «Patrius» in red, Clos de Caille «Lucis» in white and Clos de Caille «Clarisse» in rosé. Our wine, The One, ideal for festive and convivial occasions, is available in white and rosé in two new formats: 50cl and 1L.
At Domaine Clos de Caille, respect for the environment is a top priority. Certified organic since the 2024 vintage, we have adopted a traditional, artisanal approach.
Our artisan winegrowers favour the use of organic fertilisers, combined with compost made from vine shoots, plant matter and manure. Monitoring, prevention and analysis of disease cycles lead to informed responses, whatever the season, in order to preserve the health of our soils and the quality of our wine.
