Grand Blanc de Provence, Clos de Caille «Lucis» was born in the heart of an exceptional terroir, whose essence it expresses to the fullest. Identity-driven, it embodies the expertise of those who work passionately to create it. Its profile combines finesse, complexity and refinement, revealing a luminous elegance that enhances the finest dining tables.

The result of a controlled vinification process combining tradition and modernity, this wine is the product of rigorous plot-by-plot work specific to Clos de Caille. After careful sorting and harvesting in small crates, the whole grapes are gently pressed by gravity to obtain clear, pure juices. Lightly cold settled, the juice is then transferred to new barrels, one and two wines old, selected from trusted coopers. Eight months of ageing, punctuated by regular bâtonnage, gives the wine roundness, precision and complexity. A tribute to Lucia, mother of Jean-Pierre Mariotti, whose light — lucis In Latin — continues to inspire our oenologist and our artisan winemakers, this cuvée symbolises an ode to the quest for excellence and mastery of rigorous winemaking techniques.

Terroir

In collaboration with internationally renowned nurseryman Lilian Bérillon, the Clos de Caille wine estate uses mass selection: a demanding process that aims to preserve the genetic diversity of grape varieties and reveal the unique characteristics of our terroir.

The latter owes its uniqueness to the presence of silt, clay and silica on ancient limestone, shaped by the formation of the Alps. These silt-limestone soils with high potential offer a perfect balance between the freshness provided by the significant silica component and the filtering capabilities of limestone.

Located at an altitude of 200 metres on the Triassic terrace, the unique terroir surrounding our Wine estate in Provence gives our white wines concentration, freshness and elegant roundness. The diversity of the soils, ranging from cool valleys with varying clay content to sunny terraces rich in dolomitic magnesium limestone, reinforces this harmonious balance.

Assembly

Vinification & Ageing

Parcel-by-parcel vinification after selecting vines located on the Clos's most promising terroirs. Hand-picked in small crates, with meticulous sorting in the vineyard. The crates are emptied directly by gravity into an inerted pneumatic press. Pressing (light pressure) is carried out on whole grapes to obtain clear juice with little sediment. The juice is lightly clarified during a few hours of cold settling and transferred to a vinification vat. When alcoholic fermentation begins, the juices are transferred to new 5-hectolitre French oak barrels (light toasting) rigorously selected from trusted coopers. Ageing continues for a period of 8 months with regular stirring to keep the fine lees in suspension and bring roundness and complexity to the wine. White wine.
