It is this vision, both lyrical and rigorous, that drives the Mariotti family at Clos de Caille.
Founded in the 12th century by Cistercian monks from Thoronet Abbey — who also built Cîteaux Abbey in Burgundy — Clos de Caille carries on the legacy of a land where vines have been cultivated for centuries. It was in 1992 that Jean-Pierre and Simona Mariotti fell under the spell of this Provençal treasure, on the wise advice of Clément Bruno — the “Truffle Emperor” and iconic chef of the restaurant. At Bruno's in Lorgues. Like so many others before them, seduced by these lands steeped in history, where forests and hills intertwine beneath rocky ridges, they feel the call to plant and cultivate their own vines.
At that time, the estate covered only 7 hectares, of which only 2 hectares were vineyards. Convinced of the potential of the terroir, they undertook a titanic effort to restructure and expand the vineyard, driven by the certainty that the quality of the vines would be the cornerstone of their ambition.
In 2019, Jean-Pierre and Simona, accompanied by their three children — Jean-Marie, Mathieu and Clarisse — decided to expand the estate by adding a winery designed by internationally renowned architect Rudy Ricciotti. Equipped with the best equipment, this « Masterpiece » devient opérationnel depuis 2021.
Over the years, the vineyard expanded, but the family chose to wait until Clos de Caille had its own cellar before finally producing its own wines.
Today, Mathieu Mariotti manages the vineyard with meticulous care and humility. The vineyard no longer dedicates its entire production to renowned brands, thereby asserting its identity.
Under his passionate and demanding leadership, Clos de Caille will release its very first vintage in 2021, in three colours, symbolising a new era focused on excellence.
The Clos de Caille wine estate is now flourishing under the expert guidance of Matthieu Cosse, who brings precision winemaking and a new sparkle to our wines. The ageing process has gained in finesse, accuracy and depth, producing outstanding wines, crafted with the patience and high standards required by the profession.

The Clos de Caille winemaking approach is embodied in a vineyard that has been certified organic since the 2024 vintage. Our « Masterpiece », recognised as one of the most beautiful in Provence, allows us to work exclusively with single vineyard vinification, shaping the personality of our white, red and rosé wines in perfect harmony with the microclimate that blesses this exceptional setting and its soils, which are conducive to the expression of great wines.
For nearly thirty years, we have been dedicated to restructuring our vineyard, with the constant ambition of striving for excellence in winemaking.
Located between Entrecasteaux and Saint-Antonin-du-Var, the Clos de Caille estate covers 160 hectares in a single block, including 40 hectares of vineyards, in the heart of Provence Verte. Its gently sloping hillsides shape a vineyard planted on hillsides, promoting sunshine, air circulation and natural drainage. In this setting suspended between heaven and earth, the estate cultivates the rare elegance of the great wines of Provence.
Between the crystalline zone of the Maures and the Jurassic limestone, the Clos de Caille rests on ancient geology: limestone dating back 200 to 250 million years, siliceous loam-limestone soils, and dolomitic terraces on the hillsides. Nestled at an altitude of 200 metres, it enjoys a temperate climate marked by significant temperature variations between day and night, a source of freshness and aromatic purity. Our geological studies have confirmed the richness and uniqueness of this terroir.
To preserve the soul of the vineyard, the Mariotti family made the demanding choice of mass selection, carried out with the visionary nurseryman Lilian Bérillon. With deliberately limited yields, each vine fully expresses the genetic diversity of the plant, giving rise to outstanding wines that pay homage to their terroir.

En blanc et rosé, les pressurages en grappes entières, les fermentations maîtrisées et les élevages sur lies fines garantissent pureté, tension et précision. Nos cuvées sont élaborées en pressurage direct à froid, à partir de raisins entiers, des techniques qui assurent une grande limpidité de robe, une finesse tannique remarquable et une expression aromatique nette.
En rouge, les extractions douces et les élevages en foudres, œufs béton ou demi-muids préservent l’intégrité du fruit et révèlent toute la profondeur du cépage.

With its terraced vineyards, the Clos de Caille is a veritable mosaic of terroirs, each nuance of which we strive to reveal. Each plot is harvested and vinified separately in order to fully express its potential before the final blends are made.

Clos de Caille undertakes its work using a «Grands Crus» approach, practising meticulous plot selection and harvesting at optimal maturity for each plot.
Our containers are carefully selected and adapted to the personality of each grape variety, not to mark the wine, but to give it extra soul, that of the finest vintages.

Since the 2021 vintage, Clos de Caille has been reborn under the impetus of the Mariotti family, whose daily work is dedicated to revealing the generosity and uniqueness of this terroir. From this first vintage onwards, the estate has opted for mass selection, initiated alongside pioneering nurseryman Lilian Bérillon. This approach preserves the genetic diversity of the grape varieties and selects the plants best suited to our terroir and to climate change.
Driven by sustainable viticulture that respects the plant, we are convinced that a great wine is born first and foremost in the vineyard; vinification is merely its revelation. Investing in genetic diversity means ensuring the future of our vines.

On our 40 hectares of vineyards certified organic, we preserve a living ecosystem that allows the terroir to express its full authenticity. The signature for exceptional tables
The Clos de Caille Estate spans around a hundred hectares between the towns of Entrecasteaux and Saint-Antonin-du-Var, 35 km north-west of the Gulf of Saint-Tropez. Nestled at an altitude of 200 metres, our Wine estate in Provence spans 160 hectares in a single block straddling Provence Verte, Dracénie and the heart of the Var.
We produce red, white and rosé wines, all blended under the technical direction of Matthieu Cosse. Our white wines showcase the Rolle grape variety. Our red and rosé wines are blends of grape varieties such as Syrah, Grenache and Cinsault. All our wines are AOP Côtes de Provence and have been certified organic since the 2024 vintage.
Our Clos de Caille range is available in three colours, including three Têtes de Cuvée: Clos de Caille «Patrius» in red, Clos de Caille «Lucis» in white and Clos de Caille «Clarisse» in rosé. Our wine, The One, ideal for festive and convivial occasions, is available in white and rosé in two new formats: 50cl and 1L.
At Domaine Clos de Caille, respect for the environment is a top priority. Certified organic since the 2024 vintage, we have adopted a traditional, artisanal approach.
Our artisan winegrowers favour the use of organic fertilisers, combined with compost made from vine shoots, plant matter and manure. Monitoring, prevention and analysis of disease cycles lead to informed responses, whatever the season, in order to preserve the health of our soils and the quality of our wine.
