The Clos de Caille Estate spans around a hundred hectares between the towns of Entrecasteaux and Saint-Antonin-du-Var, 35 km north-west of the Gulf of Saint-Tropez. Nestled at an altitude of 200 metres, our Wine estate in Provence spans 160 hectares in a single block straddling Provence Verte, Dracénie and the heart of the Var.

Bathed in the Mediterranean climate, the Domaine du Clos de Caille enjoys ideal conditions for vine growing. Far from the coast, 35 km from Saint-Tropez, it is characterised by significant climatic variations of up to 20°C in a single day. This temperature range promotes slow and balanced ripening of the grapes. Autumn is marked by abundant rainfall, while winter is often accompanied by the Mistral wind. Spring, meanwhile, brings sunshine that is conducive to the ripening of the grapes, which continues throughout the summer until the harvest. On the edge of the estate, the surrounding forests preserve the coolness of the vines, reinforcing the unique character of this exceptional terroir.
Nestled between hills and valleys, in the heart of unspoilt nature, our wine estate in Provence owes the quality of its wines to the presence of microclimates and the geological diversity of its soils. The soil studies we have conducted have confirmed that this unique geology is ideal for producing fine wines. Thanks to a temperate climate influenced by the Mediterranean, the Clos de Caille also benefits from significant temperature variations due to its location at an altitude of 200 metres. Our gently sloping hills promote sun exposure for our vines and rainwater drainage, contributing to the expression of exceptional wines.
The estate is located on the Riasic step, between the crystalline areas of the Maures and the limestone soils of the Jura. This remarkable geology, composed of ancient limestone dating back 200 to 250 million years, was reshaped during the tectonic upheavals that formed the Alps. The estate's soils are mainly silty limestone, enriched with silica, offering a diversity that is reflected in the complexity of our wines. The cool terroirs at the bottom of the valleys, made up of silty deposits, and the deeper soils of the hillsides, terraced on a bank of dolomitic magnesian limestone, create a multitude of nuances that influence each vintage.

We produce red, white and rosé wines, all blended under the technical direction of Matthieu Cosse. Our white wines showcase the Rolle grape variety. Our red and rosé wines are blends of grape varieties such as Syrah, Grenache and Cinsault. All our wines are AOP Côtes de Provence and have been certified organic since the 2024 vintage.
Our Clos de Caille range is available in three colours, including three Têtes de Cuvée: Clos de Caille «Patrius» in red, Clos de Caille «Lucis» in white and Clos de Caille «Clarisse» in rosé. Our wine, The One, ideal for festive and convivial occasions, is available in white and rosé in two new formats: 50cl and 1L.
At Domaine du Clos de Caille, respect for the environment is a top priority. Certified organic since the 2024 vintage, we have adopted an artisanal and traditional approach.
Our artisan winegrowers favour the use of organic fertilisers, combined with compost made from vine shoots, plant matter and manure. Monitoring, prevention and analysis of disease cycles lead to informed responses, whatever the season, in order to preserve the health of our soils and the quality of our wine.

Clos de Caille undertakes its work using a «Grands Crus» approach, practising meticulous plot selection and harvesting at optimal maturity for each plot. For the production of our Côtes de Provence wines, we have also opted for the plot-by-plot vinification method, which consists of working each plot separately in order to get the best out of each one. In our winery, designed by the renowned architect Rudy Ricciotti, each plot is vinified in its own vat, allowing the unique characteristics of each terroir to be expressed. By appreciating the subtle flavours and aromas of our individual plots, we are able to proceed with finesse to create harmonious and informed blends. This ambitious process, which requires substantial winemaking equipment, is crucial to optimising the quality of our Côtes de Provence wines.
From its very first vintage, our Provence wine estate has chosen to use mass selection. Pioneered by Lilian Bérillon, a wine nurseryman, mass selection promotes the genetic diversity of grape varieties by selecting those best suited to the specific characteristics of our terroir and changes in its climate. This approach strengthens the resilience of the vines, promotes the authentic expression of each vintage and ensures consistent taste quality in every vintage.
