Selected from the finest plots and vinified separately, this cuvée reveals the full expression of its terroir. The flagship of Clos de Caille, the 2025 rosé embodies the vision and high standards of the Mariotti family and their team of winemakers.
Born of old limestone soils mixed with silica, silt and clay, it expresses a precise understanding of its origins. The balance is subtle, the freshness controlled and the substance delicately chiselled.
A harmonious blend of Grenache (60 %), Cinsault (25 %), Syrah (10 %) and Rolle (5 %), it is produced with extreme care at every stage: hand-picking, whole bunch pressing, gentle settling, then fermentation in temperature-controlled stainless steel vats.
Aged on fine lees, it gains in depth, texture and complexity before revealing its full potential, a pure, precise and contemporary expression of Provence rosé..
The result reveals a high-precision rosé, With a luminous aroma of summer fruits and a texture that prolongs the sensation of freshness.
The essence
The dress, This pale, luminous rosé captures the light delicately.
The nose opens with subtlety, revealing a fine structure of white fruit, citrus zest and floral nuances.
On the palate, The attack is precise, almost crystalline, and then the wine stretches out gracefully. The balance is established, between vibrant freshness and controlled roundness, in a sensation that is both airy and enveloping.
The final blossoms with fullness, leaving a burst of fruit, carried by a saline freshness that prolongs the emotion and signs a wine of character, both pure and profoundly elegant.
The agreement
Clos de Caille Rosé 2025 is best enjoyed as an aperitif, with Iberian ham or delicate mezzés.
At the table, it is the perfect accompaniment to stuffed courgette flowers, carpaccio of bass with citrus fruit, grilled prawns with olive oil and lemon, or roast poultry with Provence herbs.
Provencal haven of peace
Clos de Caille is first and foremost a family project, part of the history of the Mariotti family, who have been established in Monaco since the 1950s, and who fell in love with this ruined building in 1992. Driven by the passion and dedication of Jean-Pierre and Simona Mariotti, along with their three children, the estate has, in just a few years, achieved a high level of quality.
Prior to the unveiling of the first vintage in 2021, major investments have been made, both in plants and in winemaking tools. In 2019, the family will begin construction of a 1,800 m² semi-underground winery, designed by architect Rudy Ricciotti. Conceived as a veritable «work of art», it blends naturally into its surroundings, combining cutting-edge technology with traditional know-how.
At the same time, particular attention is paid to the vineyards, which are planted using massal selection with the nurseryman Lilian Bérillon, as part of a demanding, sustainable approach that places the quality of the plants at the heart of the process.

SPRING REVIVAL AT CLOS DE CAILLE
Budburst is now underway at the Domaine, with the first buds visible. This marks the start of the vegetative cycle and largely determines the rest of the season.
The pruning and bending work is almost complete. They have enabled us to control the load and ensure that the vegetation is well distributed. The soil has been maintained to encourage aeration and limit competition, while the trellising is being adjusted to support the growth of the shoots.
Vigilance is currently focused on weather conditions, in particular the risk of spring frost, to which young shoots are very sensitive. All plots are being monitored on a daily basis.
The start of the campaign lays the foundations for the coming vintage, With constant attention paid to the balance of the vines and the precision of the work carried out.
