Finding the perfect temperature is like offering the wine the ideal setting to reveal its full aromatic palette with utmost elegance.

Pairing & Occasions: An ideal companion for convivial moments, it elevates both fish carpaccios and sashimis, as well as Mediterranean dishes seasoned with fresh herbs.

Sommelier’s Tip: Serve between 9°C and 10°C in a large wine glass to reveal the fullness of its aromas and allow its texture to envelop the palate.

Clos de Caille Rouge

Tasting Notes: A refined and complex nose, blending soft spices, ripe dark fruits, and a subtle woody note—a signature of long and precise aging. On the palate, it is broad and harmonious. The persistent and elegant finish reveals spicy and lightly licorice-tinged nuances.

Food Pairing & Occasions: Perfect with a beef fillet with morels, roasted lamb with Provençal herbs, or a creamy porcini risotto. Equally sublime with a platter of aged hard cheeses such as Comté or Beaufort.

Sommelier’s Tip: Serve between 16°C and 18°C, after about 30 minutes of aeration, to fully reveal its aromatic depth and texture.
