Harvests
The harvest typically begins at the end of August and lasts about three to four weeks, depending on the maturity stage of the different parcels.
Harvesting takes place exclusively during the late hours of the night to collect grapes at cool temperatures, which preserves the integrity of the berries. This approach allows us to conduct pre-fermentation operations (pressing, maceration, clarification, stabilization) under optimal conditions, ensuring complete control and an unwavering commitment to producing high-quality wines.
For manual harvesting, Clos de Caille relies on local pickers from the surrounding villages.
Carefully selected, only the finest clusters are harvested at phenolic maturity. They are then immediately transported to the winery in small crates and handled using methods that prevent any risk of crushing.
Mechanical harvesting is performed with a selective harvesting machine, following the same strict quality standards.
