FROM 7 HECTARES TO A BENCHMARK IN PROVENCE

Au Clos de Caille, chaque geste viticole s’inscrit dans la continuité d’un héritage millénaire, transmis avec humilité et réinterprété avec exigence par nos maîtres vignerons.

Nichée au cœur de la Provence Verte, cette ancienne propriété des moines Cisterciens de l’Abbaye du Thoronet est devenue depuis 1992 le refuge de la Famille Mariotti. Longtemps, les raisins étaient revendus, jusqu’à ce qu’une analyse des sols révèle le potentiel exceptionnel de ce terroir argilo-calcaire. Après trente ans de restructuration, le vignoble compte aujourd’hui 40 hectares au sein d’un écrin préservé de 160 hectares d’un seul tenant.

Depuis 2021, un chai semi-enterré de haute technologie signé Rudy Ricciotti permet de révéler pleinement ce potentiel grâce à une vinification parcellaire. Cette rigueur est sublimée par une viticulture biologique et un travail d’orfèvre en cave, où chaque détail est pensé pour exprimer la singularité de notre terroir. Le Domaine étant en zone Natura 2000, l’équipe veille à préserver et valoriser la biodiversité de son environnement.

Clos de Caille ‘Patrius’ 2021 – Tête de Cuvée Rouge

The grapes were hand-harvested on September 23, 2021 for the Syrah and September 13, 2021 for the Cabernet Sauvignon. The Syrah was vinified half in concrete eggs and half in large oak vats (foudres), while the Cabernet Sauvignon underwent full-barrel fermentation in 500L French oak.

The ageing, representing about 40% of the final blend, took place in lightly toasted French oak: twelve months in 500L demi-muids for the Syrah and fifteen months in 225L barrels for the Cabernet Sauvignon. Bottling occurred in April 2023, followed by eighteen months of bottle ageing to enhance the wine’s roundness while preserving its brilliance.

The Result: a wine with a deep color and a complex nose of black fruits and spices. On the palate, it is full and harmonious, revealing ripe tannins and a long, elegant finish with subtle hints of oak.

Clos de Caille ‘Clarisse’ 2024 – Tête de Cuvée Rosé

Hand-harvested, whole-cluster pressed, and fermented in temperature-controlled stainless steel tanks, this wine was aged on fine lees after racking until bottling.

Clos de Caille in Saint-Tropez

Last Saturday, Clos de Caille had the pleasure of accompanying San Lorenzo Yachting for a private event held at La Bouillabaisse in Saint-Tropez, under the operational direction of Mondello Hospitality.

The evening brought together nearly 300 guests, including clients and key figures from the yachting world, who enjoyed our White, Rosé, and Red cuvées while celebrating the Provençal art of living.
