Terroir
Made up of high-quality ancient limestone combined with siliceous, loamy, and clay-rich soils, the Clos de Caille terroir offers an exceptional geological foundation. This diversity fosters a precise and nuanced expression of the wine, while preserving its balance, natural tension, and aromatic freshness.
Climate
Typically Mediterranean, the climate is marked by significant temperature shifts between day and night — often exceeding twenty degrees — providing ideal conditions for the slow ripening of grapes, conducive to aromatic finesse and complexity.
Blend
Grenache 70% | Cinsault 20% | Syrah 10%
Vinification & Ageing
The grapes are hand-harvested at full maturity. A gentle whole-cluster pressing preserves the purity of the aromatics. After a light settling, fermentation takes place in temperature-controlled stainless steel tanks, ensuring optimal precision throughout. Following alcoholic fermentation, the wine is racked and aged on fine lees to enhance texture and complexity, right up until bottling.
