The signature style of our Haute-Couture wines

Experience a provençal elegance on your table 🍷
Set against the serenade of cicadas, our vineyard nestles in a secluded forest of oaks and pines, reached by a small dirt path that winds through the lush Provençal countryside, only about thirty kilometers from the Gulf of Saint-Tropez.
THE FAMILY PASSION BEHIND OUR EXCEPTIONAL WINES
Our story is as charming as it is straightforward. Jean-Pierre and Simona Mariotti were captivated by this Provençal treasure, guided by the seasoned advice of Clément Bruno, the truffle master and acclaimed chef at the renowned Chez Bruno in Lorgues. Like so many others who have been drawn to these storied lands—where forests and hills intermingle beneath rocky peaks—they felt a deep calling to plant and nurture their own vines here.
The historic buildings, including a chapel, will be reimagined or restored by top architects to preserve the essence of the estate—a tranquil and character-filled haven. Outside, landscape designer Jean Mus is transforming the gardens and terraces, shifting from the intimacy of enclosed spaces to the grandeur of a sprawling estate that celebrates Provençal beauty. Respecting the environment, the farmhouse and its surroundings harmonize with the land’s natural authenticity.
In 2019, Jean-Pierre and Simona, joined by their three children—Jean-Marie, Mathieu, and Clarisse—decided to elevate Clos de Caille by adding a winemaking cellar worthy of its exceptional terroir.
“We took the time needed to understand how each Provençal grape variety thrives in our different plots.”
For nearly two decades, we have dedicated ourselves to restructuring our vineyard, certified organic, and achieving excellence in our cultivation practices. After a year spent designing the technical elements in collaboration with a specialized winery engineering firm, the family entrusted Rudy Ricciotti to create a semi-underground cellar with monumental dimensions.
A LIFELONG PROJECT
“My brother Jean-Marie was 5, my sister Clarisse was just 1, and I was 3 years old when we first set foot on the land at Clos de Caille. Growing up, whenever we got into trouble, our father would send us to work in the vineyards as punishment. Now, our passion for Clos de Caille has become a lifelong commitment, a deep connection we’re dedicated to passing on to future generations.” – Mathieu Mariotti
“Gradually, a philosophy of dedication and a quiet reverence for the wonders of the soil and nature turn into a true calling.” – Homme Deluxe
AN ICONIC CREATION
Our signature rosé, Clarisse, was born from a challenge: to create a wine that captures the timeless elegance of Provence while meeting our rigorous standards in winemaking. With its delicate blush color and layered structure, this cuvée embodies the boldness and refinement that the Mariotti family and the artisans of Clos de Caille strive to achieve.

Rhubarb, white currant, cool yellow fruit, pencil shavings and flint aromas are followed by a richly textured palate of mixed red berries and cream, giving a mouth coating quality. This is a very fine wine indeed.
We invite you to experience this cuvée, awarded the title of World’s Best Rosé in 2022 by the British magazine Decanter. Jean-Pierre and Simona envisioned Clarisse as a wine that mirrors their daughter: elegant yet with a spirited character.

After an intense harvest season, the vinification of the 2024 vintage is underway. This labor of love—an intricate blend of skill and patience—will reveal itself when the wines reach their peak expression.
A Time for Reflection…
“Our rigorous approach to viticulture and detailed parcel management has maximized the potential of the 2024 harvest. We waited patiently for each plot to reach peak ripeness before beginning the harvest. This careful work now continues in the cellar, where malolactic fermentation is progressing for the reds, while the whites and rosés rest on fine lees to develop added complexity.
To capture the elegance of our terroir in each glass, we follow a minimal intervention winemaking philosophy, allowing the quality of the fruit to speak for itself. Our high-tech equipment ensures perfect control over fermentations, operating at low temperatures to bring out maximum brightness in our wines. For select cuvées, aging in barrels of different sizes will enhance their structure.”
