THE WORK OF TIME : THE EXCELLENCE OF CLOS DE CAILLE
Under the guidance of the Mariotti Family, our winery brings together a variety of skilled professionals, working harmoniously with nature. Time, an essential element in our process, is a fundamental part of creating our wines. Each day, with patience and dedication, we allow time to shape our craft.

FROM VINE TO MASTERPIECE WINERY: REINVENTING THE TRADITIONAL CODES FROM PROVENCE
Each of our wines, whether white, rosé, or red, begins with meticulous care given to our vineyard plots. Our deep understanding of the unique characteristics of our terroir, along with selective massal selection of plants, enables us to capture the very best that nature has to offer.
At Clos de Caille, we approach our work with the commitment of a “Grand Cru” estate, employing careful parcel-by-parcel selection and hand-picking each grape at its peak ripeness. This process centers our wines on the freshness of the fruit, preserving its aromatic integrity and vibrant flavors.
PRESSING AND VINIFICATION : THE TRANSFORMATION OF THE FRUIT
Our “Chai d’œuvre,” crafted by architect Rudy Ricciotti, was designed with gentle, gravity-fed processes to honor and protect the quality of the fruit. Our skilled winemakers take great care to avoid any mechanical actions that might damage the berries, ensuring the finest expression of each varietal.
For our white and rosé wines, grapes are pressed as whole clusters or carefully destemmed without crushing, followed by fermentation in temperature-controlled stainless steel vats to ensure freshness and purity.

AGING: THE ART OF TIME
Our cuvees are predominantly aged in carefully selected oak barrels, chosen to complement the unique characteristics of each grape variety. This refined aging process gives our wines structure, body, and silky tannins, shaping their distinct personalities.
THE BLENDING : EMBRACING INNOVATION
Each cuvée is crafted through a meticulous blending process led by esteemed oenologist Matthieu Cosse, resulting in expressive wines with a continual pursuit of finesse and balance.
